Elderflower cordial has been made since the time of the Romans. Try this refreshing drink to see why it remains so popular.

  1. Halve and juice lemon, then place squeezed halves and juice in a large glass or plastic container with flowers, sugar, vinegar and 2.5 litres water. Stir gently, then cover and stand at room temperature for 24 hours.
  2. The next day, strain through muslin and seal in sterilised bottles. Leave to steep in a cool, dark place for 2 weeks, then store for up to 6 months (once open, keep refrigerated and use within 2 weeks).
