Give hommus a makeover with this citrus twist.
- Place chickpeas, oil, rind, 1/2 cup of juice, garlic, cumin, cayenne pepper and tahini into a food processor. Process until smooth. Taste and season with salt and pepper. Place into an airtight container. Refrigerate until required.
- Half-fill a frying pan with water. Bring to the boil over high heat. Add asparagus. Cook for 2 to 3 minutes or until bright green and just tender. Drain. Refresh under cold water. Refrigerate in an airtight container.
- At picnic, serve hommus with asparagus and savoury biscuits.
