Cooking Child Melon paddle-pops

Whether youre watching the action at the Australian Open, doing a spot of DIY or just enjoying the great outdoors this long weekend, these ice-cream treats are guaranteed to cool you down.

  1. Remove skin and seeds from watermelon. Roughly chop the flesh. Process in a food processor until smooth.
  2. Transfer to a bowl. Add 1 cup of ice-cream. Whisk until smooth. Pour into paddle-pop moulds.
  3. Repeat steps 1 and 2 above using rockmelon and honeydew melon. Freeze for 4 hours, or until firm.
