Cooking Meat Baked ham with barbecue glaze

The BBQ glaze with Dijon mustard makes this ham one to remember. For Christmas and all year round.

  1. Preheat oven to 170C or 150C fan-forced.
  2. Combine barbecue sauce, mustard and 1/2 cup of water in a small saucepan. Simmer on medium heat, stirring occasionally, for 5 mins, or until sauce begins to thicken slightly.
  3. Meanwhile, cut rind from around shank of ham, 10cm from the knuckle. Using your fingers and starting at the base of ham, carefully remove skin. Score the fat in 1cm strips, taking care not to cut all the way through to the ham meat.
  4. Line a large baking dish with foil. Place ham in pan and brush over the glaze. Bake ham for 2 hours, brushing with glaze every 30 mins, or until ham is golden and the glaze caramelised.
  5. Slice ham and serve.
