Cooking Meat Spice-rubbed pork tacos with tomato salsa

Mix Latin American flavours of cumin and paprika to make this easy Mexican favourite.

  1. Combine the tomato, coriander and lime juice in a small bowl. Add the sugar and season with salt and pepper.
  2. Combine the cumin and paprika in a glass or ceramic dish. Add the pork and stir to coat. Heat half the oil in a large non-stick frying pan over high heat. Add half the pork and stir-fry for 3 minutes or until golden. Transfer to a plate. Repeat with the remaining pork, reheating the pan between batches.
  3. Heat the remaining oil in the frying pan over medium heat. Add the onion and stir-fry for 3 minutes or until onion softens slightly. Add the capsicum and stir-fry for 2 minutes or until the capsicum is just tender. Add the pork and stir-fry for a further 1-2 minutes or until the pork is heated through.
  4. Heat the taco shells following packet directions. Divide the lettuce and the pork mixture among the taco shells. Spoon a little of the tomato mixture over each taco. Serve with the remaining tomato mixture.
