Preparing for a dinner party is made easier with this delicious recipe where everything can be put in a single dish and placed in the oven.

  1. Preheat the oven to 200°C. Line a large heatproof dish with non-stick baking paper. Add the chicken, tomato and onion and drizzle with olive oil and balsamic vinegar. Sprinkle with salt and pepper and bake for 15 minutes.
  2. Remove, baste with the pan juices and add the olives and capers. Return to the oven and cook for another 10 minutes or until the chicken is cooked through.
  3. Set aside for 5 minutes then scatter with basil. Serve immediately.
