  1. Line a shallow baking tray with foil, then brush with olive oil. Clean and scale the fish (see p 104), then lay flat on the baking tray. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper.
  2. Preheat the grill to high.
  3. Grill the fish for 1 1/2 minutes on one side, then turn over and cook for the same time on the other side.
  4. Combine the remaining oil, lemon rind, garlic, parsley and capers. Place fish on serving plates and spread mixture over top. Serve with lemon wedges.
