Create your own Cajun spice rub and use it to create exciting fish and chicken dishes at home.
- Make cajun spice rub: Place all ingredients in a bowl. Stir until well combined. Spread onto a baking tray.
- Pat fish fillets dry with paper towel. Press both sides fish into spice rub, 1 at a time, ensuring each fillet is evenly coated. Shake off excess.
- Heat oil in a large, non-stick frying pan over medium heat. Cook fish, in batches, for 3 to 4 minutes each side or until just cooked through. Serve with corn and rice.
