Baked fish on potatoes

Keep it fresh with this baked fish on slow cooked potatoes.

  1. Preheat oven to 200°C.
  2. Place potatoes in a large baking dish. Toss with oil. Season to taste. Bake for 20 mins. Sprinkle leek over potatoes. Bake for a further 5 mins, until tender.
  3. Stir zucchini and tomatoes through potato mixture. Place fish on top.
  4. Bake for a further 10-15 mins until fish flakes when tested with a fork. Serve with lemon wedges.
