Tapenade and passata infuse this baked fish with sensational flavour.

  1. Preheat oven to 180C. Spray a baking dish with oil. Place the fish in the dish. Spread tapenade over the fish. Pour over passata and season with pepper. Top with half the oregano. Drizzle with 1 tablespoon oil. Bake for 20-25 minutes or until fish flakes when tested with a fork.
  2. Meanwhile, place couscous in a heatproof bowl. Rub remaining oil into the couscous. Pour over 1 cup boiling water. Cover with plastic wrap and set aside until the liquid is absorbed. Use a fork to separate.
  3. Divide the couscous among serving plates. Cut each fish fillet in half. Place fish on top of the couscous. Top with sauce and remaining oregano.
