Make sausage rolls extra special with this pork mince, vegetable and apple filling.
- Preheat oven to 200°C. Line a large baking tray with baking paper.
- Heat oil in a frying pan over medium heat. Cook bacon, stirring, for 4 to 5 minutes or until crisp. Drain on paper towels. Set aside for 10 minutes to cool.
- Place mince, apple, carrot, zucchini, breadcrumbs, 1 egg, bacon, and salt and pepper into a bowl. Using clean hands, mix well. Divide mixture into 8 portions.
- Cut each sheet of pastry in half. Shape 1 portion of pork mixture into a long sausage shape. Place along 1 long side of pastry. Roll up firmly to enclose filling. Pinch ends together to seal. Repeat with remaining filling and pastry.
- Cut 3 diagonal slits in the top of each roll. Place onto prepared tray. Whisk remaining egg. Brush rolls with egg. Sprinkle with sunflower seeds. Bake for 25 to 30 minutes or until golden. Serve with chutney.
