Crunchy cornflake cookies

An all-time favourite cookie made special with the addition of milk chocolate chips. Enjoy with a glass of milk.

  1. Cream together butter and sugar until light and fluffy. Add the egg and beat well. Stir in flour and then the sultanas and chocolate.
  2. Drop tablespoonfuls of the mixture into the cornflakes and roll to coat. Place on a greased baking tray. Repeat with remaining mixture.
  3. Bake in a moderate oven 180°C for 15-20 minutes or until cooked. Allow to cool on a wire rack. Store in an airtight container until required.
