With a little help from the microwave, you can “bake up” delectable red velvet sweets to share with your loved ones in mere minutes.
- In large microwave-safe mug, stir together egg and oil with fork. Stir in red food coloring, buttermilk, vanilla, and sugar.
- Add cocoa powder, flour, salt, and vinegar. Beat batter until smooth, scraping down sides of mug.
- Scoop half of batter into second microwave-safe mug.
- Microwave separately for 1 1/2 to 2 1/2 min. each until risen and firm.
- If desired, top with whipped cream.
