Cauliflower and blue cheese macaroni

Cooking Vegetarian Cauliflower and blue cheese macaroni

Try a twist on an old favourite with this tasty cauliflower and blue cheese macaroni.

  1. Cook the macaroni in a large saucepan of boiling salted water following packet directions, adding the cauliflower in the last 5 mins of cooking. Drain, reserving 1/2 cup of the cooking liquid.
  2. Return the macaroni and cauliflower to the pan. Add the blue cheese, sour cream, chives, 3/4 cup of the mozzarella and the reserved cooking liquid. Toss to combine. Season. Transfer to a 6-cup heatproof dish.
  3. Preheat grill on high. Combine the breadcrumbs and remaining mozzarella in a bowl. Scatter over macaroni mixture. Drizzle with olive oil. Cook under grill for 2-3 mins or until golden and bubbling.
