A delicious healthy vegetable packed ratatouille by Curtis Stone. Great as a side dish!
- Heat the oil in a large sauce pot over medium-high heat.
- Add the onions and saute for about 4 minutes or until slightly softened.
- Add the garlic and saute for about 30 seconds or until fragrant.
- Add the red and green capsicum and saute for about 4 minutes or until slightly softened.
- Add the zucchini and corn and saute for about 5 minutes or until they are crisp-tender.
- Stir in the parsley, thyme, basil leaves and lemon juice.
- Season to taste with salt and pepper and serve.
