Sweet corn and zucchini ratatouille

Cooking Vegetarian Sweet corn and zucchini ratatouille

A delicious healthy vegetable packed ratatouille by Curtis Stone. Great as a side dish!

  1. Heat the oil in a large sauce pot over medium-high heat.
  2. Add the onions and saute for about 4 minutes or until slightly softened.
  3. Add the garlic and saute for about 30 seconds or until fragrant.
  4. Add the red and green capsicum and saute for about 4 minutes or until slightly softened.
  5. Add the zucchini and corn and saute for about 5 minutes or until they are crisp-tender.
  6. Stir in the parsley, thyme, basil leaves and lemon juice.
  7. Season to taste with salt and pepper and serve.
