Potato scallops

Cooking Vegetarian Potato scallops

Its hard to stop at just one of these super crunchy potato scallops.

  1. Cook 1 large potato in boiling water until tender. Cool. Thickly slice into 8 slices.
  2. Whisk flour with baking powder. Make a well in the centre and add egg. Gradually add water, whisking to form a smooth batter.
  3. Pour light olive oil to one-third of the way up the side of a medium saucepan. Heat to 180C over high heat
  4. Lightly dust the slices of potato in plain flour then dip in the batter, shaking off excess. Cook in the oil, in 2 batches, for 2 minutes or until golden. Sprinkle with sea salt flakes. Serve with tartare sauce.
