- Preheat the oven to 180°C. Butter a medium baking dish.
- Combine walnuts, 25g sugar, eggwhite and cinnamon in a bowl. Pull out a small handful of kataifi (keep remaining pastry covered to prevent drying out) and lay out in a square on the workbench.
- Place a spoonful of filling in centre, fold in sides, roll into a cigar shape and place in baking dish. Repeat for remaining pastry and filling (don't allow pastries to touch). Brush with butter, then bake for 30 minutes.
- Increase oven to 200°C and cook for a further 5 minutes until golden.
- Meanwhile, place remaining sugar, 300ml water, juice and rind in a pan.
- Stir to dissolve sugar, boil for 10 minutes to thicken slightly, then pour syrup over pastries.
- Serve with Greek coffee.
