Cooking Vegetarian Mixed peas and beans with garlic butter

Peas and beans taste delicious when infused with the flavours of leek and garlic.

  1. Melt the butter in a large frying pan over medium heat until foaming. add the leek and garlic and cook, stirring occasionally, for 5 minutes or until leek softens.
  2. Meanwhile, cook the peas and beans in a large saucepan of boiling water for 2-3 minutes or until bright green and tender. Drain well.
  3. Add the pea mixture to the leek mixture and cook, tossing, until well combined and heated through. Remove from heat and transfer to a serving bowl. Serve immediately.
