These traditional Welsh cakes are similar to a pancake or crumpet filled with raisins.
- Whisk together egg and water in a bowl. Combine flour, mixed spice and salt in a large bowl. Use your fingertips to rub butter into the flour mixture until it resembles fine breadcrumbs. Stir in sugar and sultanas. Add egg mixture and use a round-bladed knife in a cutting motion to mix until evenly incorporated and mixture begins to hold together.
- Turn dough onto a lightly floured surface and gently knead until smooth. Use a lightly floured rolling pin to roll out the dough until about 5mm thick. Use a 7cm-diameter fluted pastry cutter dipped in flour to cut out 24 discs.
- Heat a non-stick frying pan over medium-high heat. Add 4 pastry discs and cook for 1 minute each side or until golden brown and cooked through. Transfer to a plate and sprinkle with extra sugar. Repeat, in 5 more batches, with the remaining discs and sugar. Serve warm or at room temperature.
