Simple to prepare, but dramatic in presentation, this upside-down brown-sugar glazed carrot pastry will be a family-favourite from the first bite.
- Preheat oven to 220C. Grease a 22cm round cake pan.
- Sprinkle base of prepared pan with sugar. Top with thyme and dot with butter. Arrange carrots in a spiral pattern in the pan. Cut a 22cm circle from the pastry and place over carrot. Bake for 15-18 mins or until pastry is golden and puffed. Set aside in the pan for 2 mins to cool slightly.
- Carefully turn the tarte tatin out onto a serving platter. Sprinkle with goat's cheese and extra thyme. Serve with mixed salad leaves.
