  1. Heat water, 1/3 cup of juice and sugar in a saucepan over low heat, stirring, until sugar dissolves. Add melon. Bring to the boil. Reduce heat. Simmer for 3 minutes.
  2. Process one-third of mixture in a food processor until smooth. Pour into a 3cm deep, 30cm x 20cm lamington pan. Process remaining mixture in 2 batches. Transfer to pan. Cool completely. Cover. Freeze for 8 hours or until set.
  3. Remove from freezer. Stand for 10 to 20 minutes, or until soft enough to run a fork through. Spoon into glasses. Serve.
