Buttered squash

Cooking Vegetarian Buttered squash

Try tender button squash with your midweek dinner for a colourful and tasty side dish.

  1. Place the squash in a steamer over a saucepan of boiling water (make sure the base of the steamer doesn't touch the water). Steam, covered, for 4-5 minutes or until tender. Remove from heat. Melt the butter in a medium non-stick frying pan over medium heat. Add the squash and parsley, and gently toss until combined. Season with salt and pepper. Transfer to a serving bowl and serve immediately.
