This zesty slaw is as easy as 1, 2, pea!
- Place corn and snow peas in a heatproof bowl. Cover with boiling water. Stand for 5 minutes. Drain. Rinse under cold water. Remove to a serving bowl. Add cabbage and onion.
- Make dressing: Combine lemon rind, juice, oil, coriander and mustard in a screw-top jar. Secure lid. Shake to combine.
- Pour dressing over salad. Toss to combine. Serve.
