This side is bursting with flavour, nutrients and has the added bonus of being gluten-free.

  1. Cook quinoa following packet directions. Drain. Rinse under running cold water. Transfer to a bowl. Add kiwifruit, shallot, cranberries, parsley and feta and toss to combine.
  2. Combine the oil, vinegar and ginger in a small bowl. Pour over the salad and toss to combine.
