- Combine watercress, pears, walnuts and goat's cheese in a large bowl.
- Combine juice, oil, and salt and pepper. Pour over salad just before serving.

- 2 pears, cored, cut into thin wedges
- 1 cup walnuts, roughly chopped
- 100g goat's cheese, crumbled
- 1/4 cup lemon juice
