Try flavoursome gorgonzola chicken with crunchy apple and celery for a quick and easy salad.

  1. Using the back of a spoon, combine cheese and half the pecans in a bowl.
  2. Using a small, sharp knife, cut a slit in the side of each chicken fillet to form a pocket. Divide cheese mixture between pockets. Secure with toothpicks. Season with salt and pepper.
  3. Heat oil in a large frying pan over medium heat. Add chicken to pan. Cook for 6 minutes each side or until cooked through. Transfer to a plate. Cover. Set aside for 5 minutes.
  4. Meanwhile, combine lettuce, apple, celery and remaining pecans in a bowl.
  5. Whisk mayonnaise and lemon juice in a small jug. Season with salt and pepper. Drizzle dressing over salad. Gently toss to combine.
  6. Remove and discard toothpicks. Slice chicken thickly. Serve chicken on salad.
