Keep a batch of this creamy tarragon dressing in the fridge to drizzle over the salad just before serving.

  1. Combine oil, sour cream, vinegar, sugar, green shallot and tarragon in a bowl. Taste and season with salt and pepper.
  2. Place the lettuce in a large bowl. Cover with cold water and place in the fridge for 20 minutes to chill. Drain well.
  3. Arrange the lettuce on a large serving platter. Drizzle with the dressing and serve immediately.
