Delicious and fresh soup alternative with kick of chilli and lime.
- Place steak on a tray and freeze for 2 hrs, until semi-firm. Place noodles in a heatproof bowl and cover with boiling water. Soak for 5 mins, until soft. Drain.
- Bring stock and 2 cups of water to the boil in a large saucepan. Crush lemongrass and cut into 2cm pieces. Add to stock with lime rind and juice, ginger and fish sauce. Simmer for 2 mins.
- Thinly slice the chilled beef. Remove soup from heat. Add noodles and beef to soup. Stir to combine. The heat of the broth will cook the thin beef slices. Serve in bowls topped with spring onion, coriander, mint and chilli.
