Traditional French onion with grilled cheese toasts are a fabulous light meal for cold nights.

  1. Melt 50g of butter in large saucepan, add 5 onions, thinly sliced, and cook for 15 minutes. Stir in 2 tablespoons plain flour, cook for 1 minute, 1/2 cup dry red wine, 8 cups hot beef consomme, 4 sprigs thyme and 1 bay leaf. Season, simmer covered for 25 minutes.
  2. Slice 1 baguette into thick slices, place on oven tray, toast under hot grill for 2 minutes or until golden brown. Divide 1 cup grated gruyere or Swiss cheese among toasted slices. Grill for 1 minute or until cheese melts.
  3. Discard bay leaf. Divide cheese toasts among serving bowls, pour over hot soup. Serve with extra cheese toasts on the side.
