These pikelets with apple compote are both delicious and perfect for breakfast.

  1. Place flour and sugar in a mixing bowl. Stir in combined milk and egg until smooth. Heat a large frying pan over medium heat. Lightly grease with butter. Working in batches of 3 or 4, drop 2 tablespoons portions of batter into the pan and cook for about 1 min each side, until golden (you should get about 10 pikelets). Cool on a wire rack.
  2. To make the apple compote, cut apples into quarters and remove cores. Cut each quarter into 3 slices. Melt butter in a frying pan and add sugar and cinnamon. Stir to dissolve. Add apples slices and 1/4 cup water. Cook over medium heat, stirring occasionally, for 5 mins, or until apples are tender.
  3. Use a flower-shaped cookie cutter to make the pikelets into cute shapes. Spread ricotta onto the pikelets and serve with the apple compote.
