  1. Make compote: Place apple, cranberries, ginger and 1/4 cup cold water in a saucepan over medium-high heat. Cover. Bring to the boil. Reduce heat to low. Cook, partially covered, for 10 minutes or until apple is soft. Stir in maple syrup. Cook, stirring, for 5 minutes or until slightly thickened. Remove from heat. Cover to keep warm.
  2. Heat oil in a large frying pan over medium-high heat. Cook pork for 4 minutes each side or until cooked through. Transfer to a plate. Stand, covered, for 4 minutes. Place pork on plates. Top with compote. Serve with broccolini.
