Homemade baked beans on toast always tastes better with an egg on top!

  1. Preheat oven to 180C or 160C fan. Heat oil in a large, heatproof casserole dish to medium heat. Cook onion and garlic until translucent.
  2. Add bacon and cook for 3-4 mins. Add beans, tomato paste, tomatoes, sugar and vinegar, stir to combine and cook in oven for 1 hr, 45 mins.
  3. Remove from oven, stir through beans and cook for a further 15 mins.
  4. Serve on toast with poached egg.
