Make your own fluffy snow eggs served on sweet passionfruit syrup.
- Place the pistachios in a small frying pan over medium heat. Cook, stirring, for 3 minutes or until toasted. Remove from heat. Coarsely chop and set aside.
- Combine the water, passionfruit pulp, 100g (1/2 cup) of the sugar and the liqueur in a large frying pan over medium heat. Cook, stirring, for 3 minutes or until the sugar dissolves. Bring to the boil. Remove from heat.
- Meanwhile, place egg whites in a large clean, dry bowl. Use an electric beater to beat until soft peaks form. Gradually add the remaining sugar and beat until sugar dissolves. Continue beating for 2 minutes or until mixture is thick and glossy.
- Divide meringue mixture into 12 equal portions. Use 2 dessertspoons to shape portion of meringue mixture into an egg shape and carefully drop into the hot passionfruit mixture. Repeat with another 2 portions of meringue mixture. Set aside for 2 minutes. Use a fork to carefully turn and set aside for 2 minutes or until puffed. Use a slotted spoon to transfer to a serving bowl. Repeat with remaining meringue in 3 more batches, reheating syrup between each batch.
- Strain passionfruit syrup through a fine sieve into a jug. Pour passionfruit syrup over snow eggs. Sprinkle with pistachios and serve immediately.
