Let the kids imaginations sail away with these tasty boats.

  1. Place eggs in a saucepan. Cover with cold water. Bring to the boil over high heat, stirring constantly (this helps centre the yolks). Simmer, stirring occasionally, for 7 minutes. Drain and cool under cold running water. Peel the eggs and halve lengthways. Scoop the yolk into a small bowl. Stir in mayonnaise. Divide the egg yolk mixture evenly among the egg halves. Place 1 capsicum triangle in the centre of each egg half.
