Cool down with this refreshing lemon and passionfruit barley water.

  1. Place 1/2 cup (65g) pearl barley in a sieve. Rinse until water runs clear. Bring to the boil in a saucepan with 2 tablespoons finely grated lemon rind and 6 cups (1.5L) water.
  2. Simmer for 10 mins or until barley is tender. Strain into a bowl. Discard barley. Add 1/2 cup (110g) caster sugar, 3/4 cup (185ml) lemon juice and 1/4 cup (60ml) strained passionfruit juice.
  3. Pour into Coles Cook & Dine Glass Bottle with Ceramic Lid. Chill. Add lemon and ice to serve.
