Lavender adds French inspiration to this sparkling cocktail.

  1. To make syrup, place lavender and sugar in a saucepan with 1/2 cup (125ml) water and stir over low heat until sugar dissolves.
  2. Simmer for 2 minutes then set aside for 30 minutes to infuse. Strain and cool.
  3. To make the cocktail, combine 3 tsp cooled syrup, gin and lemon juice in a jug then divide among 4 serving glasses. Top up with Champagne or sparkling wine and garnish with lavender sprigs, if desired, to serve.
