Cooking Fish Lemon and capsicum salmon parcels

Infused with the flavours of fresh herbs and lemon and serve alongside sweet roasted capsicum, you neednt add a thing to these salmon parcels.

  1. Preheat oven to 200°C/180°C fan-forced. Combine capsicum, onion, garlic, lemon, herbs and capers in a bowl. Season with salt and pepper.
  2. Lightly grease one side of each piece of foil. Place 1 piece of salmon onto the centre of 1 piece of prepared foil. Top with 1/4 capsicum mixture. Fold up sides of foil and scrunch edges together, leaving a small opening in the top to allow steam to escape. Place onto a baking tray. Repeat with remaining salmon fillets and capsicum mixture.
  3. Bake fish for 20 minutes or until cooked to your liking. Stand for 2 minutes. Serve with potatoes and lemon wedges.
