Cooking Meat Pearl balls

These balls of mince and rice are perfect for Chinese New Year celebrations.

  1. Place rice in a bowl. Cover with cold water. Soak for 30 minutes. Drain.
  2. Using hands, combine mince, soy sauce, cornflour, mushrooms, water chestnuts, onion and carrot in a bowl.
  3. Place rice in a shallow dish. Using 1 heaped tablespoon of mince mixture at a time, roll into 20 balls. Roll balls in rice to coat. Place on a tray lined with baking paper.
  4. Place a large steamer lined with baking paper over a wok or large saucepan of simmering water. Cook, covered, in batches, for 20 minutes or until cooked through. Transfer to a plate. Cover to keep warm. Serve with chilli sauce or soy sauce..
