If the stuffing is your favourite part of a roast dinner, then this recipe is for you.
- Preheat oven to 180C. Place a 30 x 40cm piece of foil on a work surface. Brush with butter to grease.
- Heat oil and butter in a frying pan over medium heat. Add onion and cook, stirring, for 5-6 minutes or until soft. Add garlic and cook, stirring, for 1 minute or until aromatic. Transfer to a heatproof bowl. Set aside for 5 minutes to cool slightly.
- Add the pork, breadcrumbs, pistachios, egg and sage to the onion mixture. Season with salt and pepper. Use hands to mix until combined.
- Place pork mixture on foil. Arrange into a 25cm-long log, about 8cm thick. Roll up foil to enclose stuffing and twist ends to seal. Place on a baking tray. Bake in oven for 40 minutes or until cooked through. Set aside for 5 minutes. Remove foil and set aside for 10-15 minutes to rest. Cut into slices to serve.
