Cooking Meat Dukkah pork with beetroot & rocket salad

Impress lunch guests with this fresh and healthy dish of dukkah pork with beetroot & rocket salad.

  1. Preheat oven to 180C or 160C fan-forced. Place dukkah on a plate. Add the pork and roll to coat. Refrigerate for 5 minutes.
  2. Heat a non-stick ovenproof frying pan over medium heat. Spray with oil. Cook the pork, turning, for 5-6 minutes or until dukkah is golden. Place pan in oven and bake for 3-5 minutes or until just cooked through. Rest for 5 minutes.
  3. Layer the beetroot, beans and rocket on a platter. Whisk the oil and orange juice in a jug. Season. Drizzle dressing over the salad. Crumble over the feta.
  4. Slice pork and serve with salad.
