Chermoula

Cooking Fish Chermoula

This traditional Moroccan spice rub is typically used to flavour fish or seafood, but it can be used on other meats or vegetables.

  1. Place cumin and coriander seeds in a frying pan over medium heat. Cook, stirring, for 2 minutes or until seeds pop and mixture is fragrant.
  2. Place the seeds, onion, lemon juice, coriander, parsley, garlic, paprika, turmeric and cayenne pepper in bowl of a food processor and process until finely chopped. Season with salt and pepper.
