Cooking Vegetarian Savoury cornbread

This delicious savoury cornbread is a delightful accompaniment to your Sunday roast or as part of a barbecue menu.

  1. Preheat oven to 220C or 200C fan-forced. Brush an 11 x 22cm (base measurement) (1.25L/5-cup) loaf pan with the olive oil to lightly grease. Lightly dust with flour and shake out the excess.
  2. Sift flour, baking powder and salt into a bowl. Add cornmeal, sugar, milk, oil and egg, and use a wooden spoon to stir until well combined.
  3. Pour the mixture into the prepared pan. Bake in preheated oven for 25-30 minutes or until a skewer inserted into the centre comes out clean. Set aside for 5 minutes before turning onto a wire rack. Serve warm or at room temperature with pulled beef and coleslaw.
