Dhal khichdi

Cooking Vegetarian Dhal khichdi

A hearty meal of rice, lentils and spices fried in ghee and cooked down until tender and creamy - this is great wholesome vegetarian comfort food!

  1. Heat the ghee in a large heavy-based saucepan over medium heat. Add the cumin and chilli. Cook, stirring, for 1 minute or until aromatic. Add the curry leaves. Cook, stirring, for 30 seconds. Add the onion. Cook, stirring occasionally, for 4 minutes or until softened. Stir in the garlic and ginger for 2 minutes or until aromatic. Add the garam masala and turmeric. Cook, stirring, for 1 minute or until aromatic. Stir in the tomato for 3 minutes or until softened.
  2. Add the rice and lentils to the spice mixture. Stir to combine. Add the water and bring to a simmer. Reduce heat to low. Cook, stirring often, for 40 minutes or until the rice and lentils break down.
  3. Add the spinach, lemon juice and salt. Season with pepper. Cook for 1-2 minutes, stirring occasionally, or until just wilted. Serve with raita and fried curry leaves, if using.
