A fantastic snack packed with B-group vitamins including thiamin, riboflavin, niacin, vitamin B6 and folate.
- Lightly whisk egg in a bowl.
- Place plain flour in a separate bowl. Place 1 cup fine fresh breadcrumbs in another bowl.
- Heat enough peanut oil to come one-third up the side of the wok.
- Dust the asparagus pieces with flour. Dip in the egg and then the crumbs, pressing down firmly. Cook in batches for 1-2 minutes or until golden. Serve with aioli.
