Ginger: Spice up your eating with this favoursome ingredient.
- Lightly spray a wire rack with oil. Place over a large baking tray. Set aside. Using a sharp knife, carefully slice ginger into 3mm-thick pieces. Place ginger and 2 cups cold water in a saucepan over high heat. Cover. Bring to the boil. Reduce heat to low. Simmer, covered, for 30 minutes or until ginger starts to soften.
- Drain ginger, reserving 1/4 cup cooking liquid. Return ginger, reserved cooking liquid and sugar to pan over medium-high heat. Bring to the boil, stirring occasionally. Reduce heat to medium-low. Cook, stirring occasionally, for 15 minutes or until syrup has almost evaporated. Cook, stirring constantly, for 5 to 7 minutes or until sugar starts to crystallise.
- Transfer mixture to prepared rack. Working quickly, carefully separate into individual pieces. Cool completely. Serve.
