Quick, easy and delicious- this is a fantastic salad.
- Combine the orange juice, oil, vinegar and sugar in a jug.
- Combine the treviso, rocket, fennel and orange in a bowl. Add dressing. Season with salt and pepper and toss to coat.
Fennel and orange salad
- 2 tbsp fresh orange juice
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp caster sugar
- 1 treviso, leaves separated, torn
- 2 cups baby rocket leaves
- 1 small fennel bulb, trimmed, thinly sliced
- 1 orange, peeled, coarsely chopped
