This super-speedy dessert is the perfect end to a summer dinner party.
- Place caster sugar and 1/3 cup cold water in a saucepan over medium heat. Cook, stirring, until sugar is dissolved. Add orange rind and wine. Bring to a simmer. Reduce heat to low. Simmer for 2 minutes. Transfer to a heatproof bowl. Freeze for 5 minutes to cool.
- Meanwhile, using an electric mixer, beat ricotta, icing sugar and vanilla together until well combined.
- Divide fruit between serving bowls. Drizzle with syrup. Serve with ricotta mixture.
