This super-speedy dessert is the perfect end to a summer dinner party.

  1. Place caster sugar and 1/3 cup cold water in a saucepan over medium heat. Cook, stirring, until sugar is dissolved. Add orange rind and wine. Bring to a simmer. Reduce heat to low. Simmer for 2 minutes. Transfer to a heatproof bowl. Freeze for 5 minutes to cool.
  2. Meanwhile, using an electric mixer, beat ricotta, icing sugar and vanilla together until well combined.
  3. Divide fruit between serving bowls. Drizzle with syrup. Serve with ricotta mixture.
