Cooking Eggs Bacon and egg pies

Add a new spin to your traditional brekkie with these tasty bacon and egg pies.

  1. Preheat oven to 200C. Grease 4 holes of a 1 cup (250ml) Texas muffin pan. Line base and side of each hole with 2 bacon rashers, cutting to fit.
  2. Whisk eggs, milk, garlic, cheddar and basil in a bowl. Season. Divide among holes. Top with tomato. Bake for 20 mins or until set. Set aside in pan for 5 minutes to cool. Run a knife around each hole to loosen pies and carefully remove from pan. Serve with salad leaves, extra tomatoes and bread.
