Chilli-glazed pineapple

Cooking Coctails Chilli-glazed pineapple

Theres not much you cant do with sweet, juicy pineapple. We love it blended in drinks, teamed with melted cheese, charred on the barbie or, best of all, in this surprise dessert.

  1. Stir sugar and water in a non-stick frying pan over medium heat for 2 minutes or until the sugar dissolves.
  2. Add half the pineapple and half the chilli, and cook for 2 minutes each side or until golden and caramelised. Stir to coat. Transfer to serving plates. Repeat with the remaining pineapple and chilli.
  3. Top the pineapple with sorbet and mint.
