Cooking Meat Okonomiyaki (Japanese pancake)

This flavoursome Japanese pancake is delicious drizzled with mayonnaise and topped with nori and pickled ginger.

  1. Heat a frying pan over medium-high heat. Add pork; cook, stirring to break up lumps, for 5 minutes or until cooked through. Remove from heat; set aside to cool.
  2. Combine flour and baking powder in a bowl. Make a well in the centre. Add dashi and egg to the well; stir until smooth batter forms. Add cabbage, green onion and pork mince. Season with ground white pepper.
  3. Heat a little of the oil in a non-stick frying pan over medium-low heat. Pour 1/2 cup of mixture into the pan and cook for 2-3 minutes or until bubbles appear on the surface. Use a spatula to turn. Brush cooked surface with a little Worcestershire sauce. Cook for a further 2 minutes or until cooked through. Turn and cook for a further 1 minute or until surface caramelises slightly. Transfer to a plate and cover with foil. Repeat in 5 more batches with remaining batter, oil and Worcestershire sauce.
  4. Place the okonomiyaki on serving plates. Drizzle with mayonnaise, top with the nori and pickled ginger and serve immediately.
